Cardoon (Cynara cardunculus, Asteraceae)

This close relative of the artichoke is a native to the Mediterranean and also grows on Ibiza.
On Ibiza there is a tradition to use parts of the inflorescence to make cheese. They are put in water, and the water is poured over the milk, which after some hours curdles. So no rennet from animals is needed.
